Martha Stewart Makes Pancakes Fluffy "Like Clouds" with 2 Surprising Ingredients

Martha Stewart has been revealing her cooking secrets for decades. From making creamy mashed potatoes with her bestie Snoop Dogg to starring in NBC’s new cooking competition series Yes, Chef! with José Andrés, the culinary connoisseur has an endless collection of kitchen hacks up her sleeve.

Take something as simple as pancakes. Stewart has dozens of pancake recipes, ranging from classic buttermilk to one that uses ricotta cheese. She also revealed on Instagram that she’ll sometimes add bubbly carbonated water to her pancake batter, making them lighter and fluffier. And her “cloud pancake” recipe? Not only are the key ingredients a bit surprising, the final product will definitely make your mouth water.

Whether she’s adding cognac to her chicken pot pies or gussying up deviled eggs with pesto, Stewart is a master at elevating a classic dish. For example, Stewart’s recipe for “cloud pancakes” calls for cottage cheese and beaten egg whites for ultimate fluffiness.
“This pancake recipe is delicious,” she said on The Martha Stewart Show while teaching viewers how to make what she calls a “really pretty” recipe. “It’s great for dads to make for moms on Mother’s Day, it’s great for kids to make for parents any time of the year. I think it’s just a great recipe to add to your repertoire.”
Best of all, they’re easy to make! Stewart starts by separating the egg yolks from the whites, and then mixing the yolks with cottage cheese. “I like to use the small curd and 1% fat,” Stewart specified on her show. She then adds flour to the mixture along with a bit of sugar, salt, and just a pinch of cinnamon.

Next, she beats the egg white with an electric hand mixer “until they’re foamy.” And to keep them at that consistency, Stewarts adds a pinch of cream of tartar because, as she explained, it “stabilizes the egg whites.” The egg whites then get folded into the pancake batter and then they’re ready to cook.
“They’re so fluffy, they’re kinda like clouds on the griddle,” Stewart said, describing them as “soufflé pancakes.”
When you’re ready to devour them, Stewart recommends serving with 100% maple syrup and fruit like blueberries or sliced bananas. On her website, she notes that these pancakes also “make a great savory pairing” with things like avocado or eggs. But most importantly, as Stewart said on her show, “Always have warm plates for pancakes.”

Martha Stewart’s go-to breakfast every morning is simple and healthy
While Stewart has created a long list of decadent breakfast recipes beyond pancakes including candied bacon and baked French toast, she tends to eat a lighter, healthier breakfast.
In a December 2024 interview with Air Mail, Stewart revealed that she wakes up “very, very early” around 4 a.m. or 5 a.m. Her mornings also consist of reading the newspaper and exercise like pilates, weight training, or horseback riding. And for breakfast, she has a couple go-to options.
“I generally have a green juice made from vegetables in my garden and add a packet of collagen to that,” Stewart told Air Mail. “I have one cappuccino made with my San Marco machine. I sometimes have a few tablespoons of wheat germ in skim milk, or today I had half a piece of delicious, locally made sourdough-whole-wheat toast with an avocado.”

But if she’s in a snacky mood, Stewart heads to the cheese drawer. “My guilty pleasure is not at all interesting. A slice of American cheese,” Stewart told Town & Country in 2017. “In the plastic, it’s so horrible. But it’s such a good snack.”
